Cheddar Ham Soup

Ingredients

  • 2 cups diced peeled potatoes
  • 1/2 cup sliced carrot
  • 1/4 cup chopped onion
  • 1/4 cup butter, cubed
  • 1/4 cup all-purpose flour
  • 2 cups 2% milk
  • 1/4 to 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces grated cheddar cheese
  • 1-1/2 cups cubed fully cooked ham
  • 1 cup frozen peas

Directions

  1. In a large saucepan, combine the potatoes, water, carrot and onion. Bring to a boil.
  2. Reduce heat cover and cook until tender, 10-15 minutes.
  3. In another saucepan, melt butter. Stir in flour until smooth.
  4. Gradually stir in milk; add salt and pepper.
  5. Bring to a boil; cook and stir until thickened, about 2 minutes.
  6. Stir in cheese until melted.
  7. Stir into broth and vegetable mixture.
  8. Add ham and peas; heat through.
