Mashed Potatoes
Ingredients
1 kg fingerlings potatoes
240 - 360 ml whole milk - hot
250 g unsalted butter - cold
Instructions
Cook potatoes in boiling salted water for 35 minutes
Peel the potatoes
Pass the potatoes through a food mill
Add the butter and mix until fully incorporated
Add milk until your desired texture is achieved
Pass the potatoes through a fine sieve
