Mashed Potatoes

Ingredients

  • 1 kg fingerlings potatoes
  • 240 - 360 ml whole milk - hot
  • 250 g unsalted butter - cold

Instructions

  1. Cook potatoes in boiling salted water for 35 minutes
  2. Peel the potatoes
  3. Pass the potatoes through a food mill
  4. Add the butter and mix until fully incorporated
  5. Add milk until your desired texture is achieved
  6. Pass the potatoes through a fine sieve
