Fish Sandwich
Make batter and keep chilled
Make tartare sauce
Toast buns
Deep fry fish
Heat oil to 375 F (Avocado or Peanut)
Salt fish and let dry brine for 5 to 10 minutes
Dry fish with paper towels
Dust fish with flour
Dip in batter and let excess drip off
Fry for 4 minutes
Assemble sandwich
