Date and Peanut Bars

Ingredients

  • 170 g pitted dates
  • 2 tablespoons of peanut butter
  • pinch of salt
  • 100 g oat flour
  • 60 g peanuts - roasted and salted
  • 100 g chocolate

Instructions

  1. Split the dates in half length wise
  2. Place dates in a bowl and pour hot water over the dates and let stand for 4 minutes
  3. Drain and dry the dates
  4. In a food processor add the dates, peanut butter and salt
  5. Grind to a smooth paste
  6. Remove about 40% of the paste into a bowl
  7. Add the oat flour the food processor and pulse until the flour is completely incorporated
  8. Remove the flour paste mixture onto a sheet of wax paper
  9. Cover with another sheet of wax paper and roll out to a 1/2 inch thick rectangle
  10. Top with the remaining paste and smooth to an even top layer
  11. Top with the peanuts and lightly press the nuts into the top paste layer
  12. Place in the freezer for 30-40 minutes
  13. Temper your favorite chocolate
  14. Cut the candy into bars of your desired size
  15. Turn the bars over and cover the bottoms with the tempered chocolate
  16. Place the bars in the fridge for 5 minutes
  17. Turn the bars over and cover the tops and sides with chocolate
  18. Chill
