Vanilla Cake Recipe (made with oil, not butter)

An Easy Vanilla Cake recipe makes a celebration possible any day of the week! This is a truly simple cake that doesn't require a mixer and is made without butter or buttermilk. You just need oil to give the cake a tender, moist crumb.

Ingredients

  • 2 cups all-purpose flour (2 cups = 250 g)
  • 1 cup sugar (1 cup = 200 g)
  • 1 teaspoon baking soda
  • ⅛ teaspoon kosher salt
  • 1 cup milk (any type will work; you can even use water, but the cake won't have quite as rich of a flavor)
  • ⅓ cup vegetable oil (see note)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon white vinegar or apple cider vinegar
  • 1 large egg

Instructions

  1. Heat oven to 350 degrees F. Spray an 8×8 pan with nonstick cooking spray.
  2. In a medium mixing bowl whisk together the flour, sugar, baking soda, and salt.
  3. In a larger mixing bowl whisk together the milk, vegetable oil, vanilla, vinegar, and egg until smooth.
  4. Sprinkle the dry ingredients over the wet ingredients and stir until just combined (stop mixing as soon as no dry spots remain so that you don't overmix the batter).
  5. Pour the cake batter into the prepared pan.
  6. Bake until a tester inserted in the center comes out clean and the cake springs back when pressed on the top, 30 to 33 minutes.
  7. Let the cake cool before slicing and serving. (Note: If adding frosting, be sure that the cake is completely cool before adding frosting.)
