Soy Ginger
Ingredients
1 tablespoon sesame seeds
1/4 cup plus 2 tablespoons soy sauce
3 tablespoons unseasoned rice vinegar
2 tablespoons Mirin (substitute 1 tbl Vermouth and 1 tbl Dry Sherry)
2 tablespoons Grapeseed oil
2 teaspoons Asian sesame oil
2 scallions, thinly sliced on the diagonal
1/4 cup finely julienned peeled fresh ginger (1 ounce)
Procedure
In a small skillet, toast the sesame seeds over moderate heat, stirring a few times until golden, 3 to 4 minutes.
In a small bowl, mix the soy sauce with the rice vinegar, mirin, grapeseed and sesame oils, scallions and ginger.
Marinade for fish
Brush the fish with half of the soy-ginger dressing.
Cover and refrigerate the fish for 30 minutes.
Use the remaining room temperature marinade as a dressing on the fish when served.
