soy_ginger_for_fish

Soy Ginger

Ingredients

  • 1 tablespoon sesame seeds
  • 1/4 cup plus 2 tablespoons soy sauce
  • 3 tablespoons unseasoned rice vinegar
  • 2 tablespoons Mirin (substitute 1 tbl Vermouth and 1 tbl Dry Sherry)
  • 2 tablespoons Grapeseed oil
  • 2 teaspoons Asian sesame oil
  • 2 scallions, thinly sliced on the diagonal
  • 1/4 cup finely julienned peeled fresh ginger (1 ounce)

Procedure

  1. In a small skillet, toast the sesame seeds over moderate heat, stirring a few times until golden, 3 to 4 minutes.
  2. In a small bowl, mix the soy sauce with the rice vinegar, mirin, grapeseed and sesame oils, scallions and ginger.

Marinade for fish

  1. Brush the fish with half of the soy-ginger dressing.
  2. Cover and refrigerate the fish for 30 minutes.
  3. Use the remaining room temperature marinade as a dressing on the fish when served.
