Mushroom Stock

Ingredients

  • 1,105 grams Water
  • 500 grams Button Mushrooms - quartered
  • 1 medium Onion - sliced
  • 140 grams Oloroso Sherry
  • 120 grams Soy Sauce
  • 1 head Garlic - peeled and separated into cloves

Procedure

  1. Put all ingredients in a pressure cooker.
  2. Cook on high pressure for 15 minutes.
  3. Let the pressure dissipate naturally.
  4. Strain through fine mesh strainer.
