Mushroom Stock
Ingredients
- 1,105 grams Water
- 500 grams Button Mushrooms - quartered
- 1 medium Onion - sliced
- 140 grams Oloroso Sherry
- 120 grams Soy Sauce
- 1 head Garlic - peeled and separated into cloves
Procedure
- Put all ingredients in a pressure cooker.
- Cook on high pressure for 15 minutes.
- Let the pressure dissipate naturally.
- Strain through fine mesh strainer.
