Grilled Lemon Pepper Chicken Salad

Ingredients

  • 5 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1/2 teaspoon tabasco sauce
  • 1/2 teaspoon thyme
  • 3/4 pound chicken breast half without skin
  • 1 medium red onion
  • 1/2 head romaine lettuce
  • 1/2 cup feta cheese

Procedure

  1. Flatten chicken breast halves to no more than 1/2 inch thick.
  2. Whisk olive oil, lemon juice, pepper sauce and thyme. Season with salt and pepper. With 2 tablespoons of the marinade, marinate chicken breasts for at least 30 minutes (and no more than 4 hours).
  3. Warm remaining dressing.
  4. Grill chicken and onion slices, ~4 minutes per side.
  5. Separate onion rings, slice chicken. Arrange over lettuce and sprinkle with feta.
