Greek Chicken and Potatoes

Ingredients

  • 1/2 Chicken cut into pieces
  • 3 Yukon Gold potatoes
  • 1 Onion - medium
  • 6 Cloves Garlic - peeled and whole
  • 1 Lemon sliced
  • 3 cups chicken stock
  • 3 tbl. Lemon Juice
  • 2 oz. Olive oil
  • 2 tsp. Oregano
  • 1 1/2 tsp. Paprika
  • 1/4 tsp. Allspice
  • Salt
  • 1 Tomato chopped
  • Kalamata Olives
  • 1 tbs. chopped Parsley

Procedure

  1. Preheat the oven to 375℉.
  2. Cut potatoes into quarters. Place them in a baking dish.
  3. Slice the onions and add them to the potatoes.
  4. Add the garlic to the potaties
  5. Place the chicken on the potatoes and onions.
  6. In a small bowl mix olive oil, chicken broth, salt, paprika, allspice, oregano and lemon juice.
  7. Pour it over the chicken and tuck in a few slices of lemon.
  8. Cook uncovered in the oven for 50 minutes to 1 hour until the chicken is fully cooked and the potatoes are tender.
  9. Top with chopped tomatoes, kalamata olives and parsley.
