St. Louis cut Spare Ribs

Total Time: 4 1/2 to 5 hours

Ingredients

Procedure

  1. Heat smoker to 250⁰ F
  2. Remove silver skin and trim excess fat from rigs
  3. Rub ribs with mustard followed by the dry rub
  4. Smoke for 2 hours
  5. Spray the ribs with apple juice mixture every 30 minutes
  6. Remove ribs from smoker and place on aluminum foil long enough to cover the ribs
  7. On the ribs add a few patties of butter, apple juice and sprinkle with more rub and vinegar sauce
  8. Double wrap the ribs meat side down
  9. Put the wrapped ribs back in the smoker and cook for 1 1/2 hours at 250⁰ F
  10. Remove from the smoker and let rest for 30 minutes
  11. Place the ribs on fresh aluminum foil meat side up
  12. Brush the ribs with warmed BBQ sauce and return to smoker for 15 minutes
  13. Remove cut and serve
