Sourdough Bread
2:00 PM: Mix the dough/Rest for 1 hour
3:00 PM: Mix with dough hook for 6 minutes - Window test every two minutes
5:00 PM: Bulk rise for 2-3 hrs @ 75- 78 F
7:00 or 8:00 PM: Cover and chill the bowl overnight
6:00-8:00 AM (the following morning): Shape & Bake the dough
