Sourdough Bread
2:00 PM: Mix the dough/Rest for 1 hour
3:00 PM: 1st Stretch and Fold
3:30 PM: 2nd Stretch and Fold
4:00 PM: 3rd Stretch and Fold
4:30 PM: 4th Stretch and Fold
5:00 PM: Bulk rise for 2-3 hrs @ 75- 78 F
7:00 or 8:00 PM: Cover and chill the bowl overnight
6:00-8:00 AM (the following morning): Shape & Bake the dough
