Lemon Chicken
Braised chicken with lemon soy sauce and ginger is a delicious and flavorful dish. Here's a simple recipe for you:
Ingredients:
2 lbs chicken pieces (thighs, drumsticks, or a mix)
1/4 cup soy sauce
1/4 cup fresh lemon juice
2 tablespoons honey or brown sugar
1 tablespoon grated ginger
3 cloves garlic, minced
1 teaspoon sesame oil
1 tablespoon vegetable oil
1 onion, sliced
1 bell pepper, sliced
1 cup chicken broth
Salt and pepper to taste
2 tablespoons chopped green onions (optional, for garnish)
Instructions:
Marinate the Chicken:
In a bowl, mix together soy sauce, lemon juice, honey (or brown sugar), grated ginger, minced garlic, and sesame oil to create the marinade.
Place the chicken pieces in a large bowl or zip-top bag and pour half of the marinade over them. Reserve the other half for later. Allow the chicken to marinate for at least 30 minutes to an hour in the refrigerator.
Sear the Chicken:
Heat vegetable oil in a large, oven-safe skillet or Dutch oven over medium-high heat.
Remove the chicken from the marinade, allowing excess liquid to drain off. Reserve the marinade for later.
Sear the chicken pieces in the hot pan until browned on all sides. This step helps to lock in flavor.
Saute Vegetables:
Remove the seared chicken from the pan and set aside.
In the same pan, add a bit more oil if needed. Sauté sliced onions and bell peppers until they are softened.
Braise the Chicken:
Preheat your oven to 350°F (175°C).
Return the seared chicken to the pan with the sautéed vegetables.
Pour in the reserved marinade and chicken broth.
Bring the liquid to a simmer, cover the pan, and transfer it to the preheated oven.
Braise for about 45 minutes to 1 hour, or until the chicken is tender and cooked through.
Serve:
Remove the pan from the oven.
Season with salt and pepper to taste.
Garnish with chopped green onions and sesame seeds if desired.
