Pan-Seared Steak and Oven-Finished

  1. Preheat the oven to 425 degrees F
  2. Season steak salt and black pepper
  3. Heat olive oil in a cast-iron skillet to 320 F.
  4. Put steaks in the pan with a clove of whole peeled garlic clove, sprigs of thyme and a sliced shallot
  5. Cook steaks in the hot skillet until lightly browned on the bottom, 2 ½ minutes
  6. Flip and cook until browned on the other side and red in the center, about 2 minutes more
  7. Transfer skillet with the steaks to the oven.
  8. Bake in the preheated oven until steaks reach desired temperature
  9. Remove steaks from oven; season with salt. Let rest for 5 minutes before serving.
