1,105 grams Water
500 grams Button Mushrooms - quartered
1 medium Onion - sliced
140 grams Oloroso Sherry
120 grams Soy Sauce
1 head Garlic - peeled and separated into cloves
Procedure
Put all ingredients in a pressure cooker.
Cook on high pressure for 15 minutes.
Let the pressure dissipate naturally.
Strain through fine mesh strainer.
