Fish Sandwich

  1. Make batter and keep chilled
  2. Make tartare sauce
  3. Toast buns

Deep fry fish

  1. Heat oil to 375 F (Avocado or Peanut)
  2. Salt fish and let dry brine for 5 to 10 minutes
  3. Dry fish with paper towels
  4. Dust fish with flour
  5. Dip in batter and let excess drip off
  6. Fry for 4 minutes
  7. Assemble sandwich
