Cod or other firm white fish
Brioche Bun
Butter Lettuce
American Cheese (optional)
Tartare Sauce
Beer Batter
Make batter and keep chilled
Make tartare sauce
Toast buns
Deep fry fish
Heat oil to 375 F (Avocado or Peanut)
Salt fish and let dry brine for 5 to 10 minutes
Dry fish with paper towels
Dust fish with flour
Dip in batter and let excess drip off
Fry for 4 minutes
Assemble sandwich
