====== St. Louis cut Spare Ribs ====== Total Time: 4 1/2 to 5 hours ===== Ingredients ===== * St. Louis Ribs * Yellow Mustard * [[pork_rub|Pork Rub]] or [[basic_rub|Basic Meat Rub #1]] * 50 /50 apple juice and water in spray bottle * [[vinegar_sauce|Vinegar Sauce]] * [[bbq_sauce|BBQ Sauce]] ===== Procedure ===== - Heat smoker to 250⁰ F - Remove silver skin and trim excess fat from rigs - Rub ribs with mustard followed by the dry rub - Smoke for 2 hours - Spray the ribs with apple juice mixture every 30 minutes - Remove ribs from smoker and place on aluminum foil long enough to cover the ribs - On the ribs add a few patties of butter, apple juice and sprinkle with more rub and vinegar sauce - Double wrap the ribs meat side down - Put the wrapped ribs back in the smoker and cook for 1 1/2 hours at 250⁰ F - Remove from the smoker and let rest for 30 minutes - Place the ribs on fresh aluminum foil meat side up - Brush the ribs with warmed BBQ sauce and return to smoker for 15 minutes - Remove cut and serve
