  * 7.5 ounces red wine vinegar
  * 1 tablespoon honey
  * 1 tablespoon Dijon mustard
  * 0.8 grams xanthan gum
  * kosher salt and freshly ground black pepper – to taste

  - Combine all ingredients in a blender.
  - Add xanthan gum while spinning.
  - Shelf stable.
