====== Soy Ginger ====== ===== Ingredients ===== * 1 tablespoon sesame seeds * 1/4 cup plus 2 tablespoons soy sauce * 3 tablespoons unseasoned rice vinegar * 2 tablespoons Mirin (substitute 1 tbl Vermouth and 1 tbl Dry Sherry) * 2 tablespoons Grapeseed oil * 2 teaspoons Asian sesame oil * 2 scallions, thinly sliced on the diagonal * 1/4 cup finely julienned peeled fresh ginger (1 ounce) ===== Procedure ===== - In a small skillet, toast the sesame seeds over moderate heat, stirring a few times until golden, 3 to 4 minutes. - In a small bowl, mix the soy sauce with the rice vinegar, mirin, grapeseed and sesame oils, scallions and ginger. ==== Marinade for fish ==== - Brush the fish with half of the soy-ginger dressing. - Cover and refrigerate the fish for 30 minutes. - Use the remaining room temperature marinade as a dressing on the fish when served.
