====== Fish Sandwich ======

  * Cod or other firm white fish
  * Brioche Bun
  * Butter Lettuce
  * American Cheese (optional)

  * [[beer_batter|Beer Batter]]

  - Make batter and keep chilled
  - Make tartare sauce
  - Toast buns

===== Deep fry fish =====
  - Heat oil to 375 F (Avocado or Peanut)
  - Salt fish and let dry brine for 5 to 10 minutes
  - Dry fish with paper towels
  - Dust fish with flour
  - Dip in batter and let excess drip off
  - Fry for 4 minutes
  - Assemble sandwich
